Ingredients
1 cup broccoli, steamed
1 cup red pepper, large dice
1/2 cup carrots, julienne
1 cup red onion, large chop
2 Tbsp. Mizkan Ponzu Citrus Seasoned Soy Sauce
2 Tbsp. Mizkan Mirin
2 Tbsp. Mizkan Organic Rice Vinegar
2 Tbsp. canola oil
1 Tbsp. garlic, minced
1 Tbsp. ginger, minced
1 Tbsp. scallions, sliced
6 oz. chicken, thinly sliced
3 cups vegetable broth
14 oz. Udon noodles, cooked or fresh
Directions

1. In a small bowl combine Mizkan Ponzu Citrus Seasoned Soy Sauce, Mizkan Sweet Mirin, and Mizkan Organic (or Natural) Rice Vinegar.

 

2. Heat large sauté pan and add oil. Sauté red onions for 1 minute.

 

3. Add garlic, ginger, and chicken and cook for 3 minutes until cooked through.

 

4. Add steamed broccoli, red peppers, carrots and cook for 1 minute.

 

5. Add cooked Udon noodles and Ponzu, Mirin, Rice Vinegar blend.

 

6. Continue to cook on high for 3 minutes until sauce is almost absorbed.

 

7. Add 3 cups of broth and bring to a simmer.

 

8. Transfer to plate and garnish with scallions.
